Festive Virginia Bluefish
½ lb. Bluefish fillets
½ cup Honey mustard pretzels, crushed (not too finely)
Nonstick cooking spray
Preheat oven to 500 degrees. Using a sharp knife, slide blade between flesh and skin and remove fillet skin. Then remove dark flesh in the center of the fillet and discard. Place fish in small plastic container. Sprinkle Italian dressing over fish, turn fish so all sides all covered. Roll fish in pretzel crumbs until covered on all sides. Spray pan and place fish in pan. Bake for about 10 to 12 minutes or until fish flakes. Serves 2.
